How We Started

What We Do

Our aim is to provide your family with a tasty, healthy loaf of bread. Most traditional sourdough breads lack nutrients because a dry yeast is used that doesn’t benefit your microbiome. By using a fermented sourdough starter we get the natural sour flavor and the richness of the protein, fiber, and various micronutrients. Our sourdough loaves are gentle on your blood sugar and keep you fuller longer. The longer the dough ferments the easier it is for your body to digest. The original recipe has only five pronounceable ingredients so you know exactly what you’re getting. We are always learning and experimenting to give you our very best! These loaves are made with practice, time, and a whole lot of love. Happy toasting!

We’re Wild For Starters

Kneads Proof is a cottage home bakery near the heart of downtown Lodi. Our journey started as we endeavored to produce a loaf of bread that was health conscience. We were looking for a bread that wouldn’t spike the blood sugar and would be easily digestible. A wild caught sourdough starter is where we began. It’s been a long process of learning this unique dough to bring a delightful loaf you can feel good about.

Our Story

The Why To Our Beginning

2014 was a year that drastically and literally changed the face of our family’s diet. One of my daughters started to view food as an enemy and head down the path that all too many girls relent to. I refused to let that be a stronghold in our home.  Finding a different approach to feeding the family took on life. Through many failed attempts at making things taste good we gradually found our groove. We began to put food on the table that appealed to the whole family. My daughter’s outlook on food was changing. She was learning the benefits of foods and how all the food groups are essential for health. Our family now uses food to our benefit. We don’t let food abuse us. We have knowledge and understanding to help us withstand making bad choices.
This process brought me to a new level of experimenting with foods in the kitchen. To name a few, kombucha, yogurt, keifer, and a wild sourdough starter.
The sourdough starter is where this story takes a turn that leads us here. At my church several of the ladies were working towards getting their families on a trimmer train so to speak. When I started posting, on IG, loaves of the bread I was making with my starter I was getting a request here and there from them. “You wouldn’t be selling any of that bread would you???” “Could I buy some of your bread?” As I became capable of making the sourdough loaves I felt more confident that I could produce enough to share.
Why would health conscious people be interested in bread? What’s the hype about this sourdough? The flours used have health benefits that far outdo most grain options available. You can read the “Why Rye” and “Spelt It Out” to get a deeper insight to these superfood flours.
Sourdough is created by fermentation which is the break down of carbohydrates causing the dough to sour and adding many nutritious benefits to the bread. 
For several years now this has been a staple in our home. We look forward to continuing this bread baking venture and sharing with our local community.

Rustic Sourdough Loaves

Sun Dried Tomato & Basil 10 ~ Garlic Herb 8~ Everything Bagel 7 ~ Garlic & Rosemary 8 ~ Plain 6 ~ Cheddar Jalapeño 10

In our breads we use a Rye starter and Whole Wheat White flour for a blood sugar friendly bread that’s high in fiber and protein. The yeast we use here at Kneads Proof is wild caught, meaning it comes from the air. The most local you can get! Our fermentation process is long, meaning it deepens the “sour” flavor and no other leavening agents are added —our bread does the work for us. It has taken time and tedious measuring to perfect this process and we are confident it will be love at first bite!

Sourdough Bagels

Blueberry 8 ~ Cinnamon Raisin 8 ~ Everything Bagel Seasoning 7 ~ Italian Herb 7 ~ Sesame 7 ~ Onion 7 ~ Plain 6

This bagel recipe uses the same sourdough starter as our loaves. A long ferment is also used with the bagels. We want these bagels to be just as gentle on your body’s system as our sourdough loaves. Whether you want a morning bagel with cream cheese, egg sammie, or an afternoon lox and capers, these are sure to hit the spot.

Sourdough Sandwich Loaf

The original loaf has quickly become a staple our customers request on repeat. A healthy no nonsense loaf that makes a perfect start to any sandwich you can dream up! The Cinnamon Raisin loaf is so reminiscent of the one I grew up eating! It is easily a favorite of mine. Butter, peanut butter or cream cheese. Yes, please!

Monkey Bread

Do you remember seeing these in your chain grocery store freezer section? Well I’ve condensed the ingredients list to about one-third of what those frozen ones are made of. These have been a huge hit with my customers! Sure to hit the sweet tooth right where it’s at. And of course like all that  I make, this is sourdough too.

Here’s How We Operate

Orders are open Tuesday 7am through Thursday 5pm. Orders are ready during the weekend. We will contact you to let you know and schedule a pick up or delivery. (Deliveries are free within 5 miles of our kitchen.) Simply use the contact form at the bottom place an order.
